Your group excursion to the Waldviertel!

From the variety of beers to Waldviertel specialities

Even over 100 years ago, summer holidaymakers loved to stroll up to the Schwarz Alm – a small alpine hut surrounded by a large meadow. It’s no different today. The incomparably peaceful location in the large forest clearing and the Waldviertel hospitality with its culinary and regional specialities make the Schwarz Alm a popular excursion destination for groups.

Kitchen philosophy

How do we see our kitchen line? Well – it is deliberately regional and authentically Waldviertel. We mainly draw from the diverse delicatessen “Waldviertel”. Poppy, carp, potatoes, cereals, game, high-quality meat and the variety of garden and wild herbs are our typical basic products. And we are grateful and very proud to have this wealth on our doorstep.

But for all his attachment to his homeland, the Waldviertler is also an innovative, creative, inventive and, above all, curious person who likes to keep his nose to the wind and try out new things. However, he never forgets his uncomplicated nature and down-to-earth attitude. This is also reflected in the creativity of our dishes – allowing new things and simply trying them out.

The award-winning beers from the Zwettl private brewery harmonise perfectly with the New Waldviertel Cuisine. “Cooking with and to beer” – this is the title under which many creative dishes have been created over the years, which go perfectly with Original, Pils, Zwickl, organic beer & Co.

We have listed our range of beers for you in a separate beer list and we source all of our wines from Austria. The fruit juices from farm production come from the Thayatal and the great distillates directly from the Waldviertel and Austria.

We wish you bon appétit!

Göthans fruit farm

In the Waldviertel, but close to the border with the Weinviertel, lies the small apple village of Missingdorf. The Göthans fruit farm with its apple orchards is located between well-tended orchards and vineyards.

Gerald Göthans produces high-quality fruit juices, nectars, brandies and vinegar variations with passion and tradition – all from his own cultivation. Quality always takes centre stage and you can taste it.

Our efforts are documented by various certifications, e.g. we produce according to the guidelines of the AMA seal of quality.

Höllerschmid

“BECAUSE IT’S NOT CUTE WHERE IT COMES FROM” High-quality meat from the immediate region or Austria, finely flavoured, juicy and tender, yet firm, beautifully marbled, appropriately matured and cut by our experienced butchers according to all the rules of the art.

The original Styrian chicken comes from selected farms in Styria and Burgenland. After slaughter, the poultry is quickly and freshly processed, cut, packaged and labelled exclusively by hand at the Lugitsch family business in south-eastern Styria, which was founded in 1909.

Butcher’s Böck

Our butcher’s has a long tradition and has been in business since 1862.

The cattle and pigs that are processed for our products come from the region. This is the only way to guarantee freshness and the best flavour.

Our sausage and meat products are produced according to our own recipes. We also offer the typical Waldviertel smoked meat, which is characterised by slow smoking with beech wood.

Zwettl private brewery

The philosophy of the Zwettl private brewery is based on customer focus, quality, tradition and regional ties.

The power of the region is utilised intensively.

On the one hand, the ingredients for brewing beer – hops, malting barley and water – are sourced almost entirely from the immediate vicinity of the breweries, and on the other, by working with and for the people of the Waldviertel.

The brewery’s commitment to the region is reflected in its high quality standards. Waldviertel people are conscientious, careful, reliable and persevering, just as the highlands in the far north of Austria have produced for many generations. The Waldviertel with its special climate provides the perfect basis for excellent hops and first-class barley. The Zwettl private brewery therefore consciously utilises these natural treasures typical of the region.

Waldland

Since it was founded in 1984, Waldland has been committed to providing Waldviertel agriculture with new perspectives. Waldviertel poppies, various spices and tea herbs, but also animal alternatives such as fish production.

Fish production with carp and trout has always been of great importance in the Waldviertel. The WALDLAND noble catfish expands the traditional range here.

Our noble catfish grow in a sustainable recirculation system with very low water usage and natural water filtration. The young fish are specially bred at Waldland. The fish feel at home in the natural, high water quality.

Unfried

Juicy fruit, crunchy fresh vegetables … It makes us a little proud that we supply what nourishes people, keeps them healthy and makes them happy.

Unfried’s own lovingly cultivated orchards are located south of the Danube and offer real Wachau apricots, sweet cherries, crunchy apples and juicy, sun-ripened pears.

As a family business with two and a half decades of expertise in the fruit and vegetable sector, we have never tired of constantly improving the way we work and all the processes in our company.

Waldviertler Roggenhof

The Waldviertler Roggenhof is the 1st whisky distillery in Austria (since 1995).

Roggenreith is a small village in the Waldviertel. The Waldviertel is as mystical as the Scottish highlands, as structurally weak as Ireland and almost as lonely as the Canadian wilderness.

Rye has been grown around Roggenreith for centuries, in keeping with the name of the village. And for just as many years, it has only been used to make bread. Until 1995, when the “Waldviertler Roggenhof” went one step further and began distilling the grain.

Kingfisher fish farm

We obtain our fresh freshwater fish (except carp) from Eisvogel, a pioneer of natural fish farming. Located in Molln in the middle of the Kalkalpen nature reserve, the company breeds the best fish in natural ponds thanks to the excellent water quality.

The fish are only taken out of the water after they have been ordered, butchered and carefully processed by hand. This prevents mechanical damage and keeps the fish fresh for longer.

Zwettl Abbey Pond Farm

We have been supplying the region around Zwettl with top-quality fish for more than 700 years. We mainly produce carp and trout in our ponds, but we also grow other fish such as pike, zander and tench in our 15 ponds.

In the interests of sustainability, our stock fish are bred in-house. We fish our ponds in autumn when the air temperature is cool. We provide you with the best edible fish from regional production and of the highest quality.

Holzweber farm

Our farm is located in a small village called Süßenbach in the Waldviertel. Several generations live and work together on our farm.

The well-being of our chickens is very important to us, which is why we have animal-friendly housing with plenty of litter, comfortable perches and large scratching and exercise areas and free access to local, GMO-free feed and drinking water. Our eggs are labelled with the AMA seal of quality.

Poppy village Armschlag

The poppy seed village of Armschlag is located in the Lower Austrian Waldviertel at 750 metres above the Wachau between Ottenschlag and Zwettl.

On around 10 hectares of cultivated land, the poppy fields bloom for around two weeks in July with the Waldviertler grey poppy, a purple, white and red flowering poppy variety whose origin in the Waldviertel is protected by the EU.

more information
Waldviertler Mohnhof

The “Waldviertler Mohnhof” has been working with respect for nature for generations. The fine “poppy seed oils” are gently extracted using only simple mechanical pressing, without additional heat or the addition of solvents.

The valuable ingredients of the poppy seed are thus preserved in the oil. Our poppy seed oils remain natural and pure.

We achieve the quality of our poppy seed products through the loving treatment of nature, the cultivation of old varieties, careful harvesting and meticulous processing.

Rogner Distillery

We only use flawless and seasonal fruit – pome fruit, stone fruit and soft fruit – from the region for our distillates. Citrus fruits from Calabria for the gin and molasses for our rum.

We also have grain fields right on our doorstep.

Only the ripe, full grain makes the whisky, where we use up to three different varieties for production, what it is. Since 2013, we have been using only ancient grains and transforming them into flavourful whisky.

There are also a few hectares of forest on the family farm. The wood for the kiln therefore also comes from our own forestry.
