Schwarz Alm poppy seed and potato cake
Ingredients
- 370 g butter
- 250 g icing sugar
- 7 pcs. eggs, yolks and egg whites separately
- 2 pcs. egg white
- 150 g potatoes (waxy, e.g. “Ditta”), cooked and grated
- 250 g grey poppy seeds, crushed
- 120 g hazelnuts, grated
- 60 g flour, smooth
- 120 g granulated sugar
Preparation

Beat all 9 egg whites with the granulated sugar until stiff peaks form.
Beating
Beat the butter with the icing sugar until fluffy. Gradually beat in the egg yolks and carefully fold in the cooked, grated potatoes. Mix together the poppy seeds, nuts and flour and fold into the sponge mixture, alternating with the snow. Finally, pour into a buttered cake ring with a diameter of 27 cm and bake at 160 °C for one hour until golden brown.
